-Abstract: Pectin, a key component of plant cell walls, is widely used after extraction as a gelling agent in the food industry. The study's main objective was to determine the effect of the extraction conditions on pectin characteristics and to apprehend possible structural and macromolecular variations related to citrus sources. Besides, isolating the main pectin building blocks and characterizing them individually gave better insights into this polymer.
